Bristol farm-to-table restaurant Wilsons will be one of a handful of restaurants followed in Apple TV+’s new eight-part documentary series, Knife Edge: Chasing Michelin Stars, premiering on Friday 10th October.

The series is produced by Studio Gordon Ramsay Global, the eponymous production company from the world-famous chef, restaurateur, author and executive producer, and is hosted by food expert, and co-founder and presenter of TOPJAW, Jesse Burgess.

Exploring the high-stakes world of international fine dining with exclusive Michelin Guide access over the course of the year-long Michelin Guide season, Knife Edge: Chasing Michelin Stars follows the fates of elite chefs at some of the world’s most unique and celebrated restaurants to determine if they will win, maintain or lose that precious Star. From attempting to gain their first Star, tirelessly working to secure their distinction, or striving to achieve a second or an elusive third Star, each chef faces a deeply personal challenge.

The Michelin Star is the most prestigious and elusive culinary award in the world, recognising the finest ingredients cooked to the highest possible standards. Filmed in cities from Los Angeles to London, Mexico City to Copenhagen, each chef attempts to win a Star or face the crushing blow of losing one, as the Michelin Guide’s team of inspectors use false identities and phone numbers to dine anonymously. After all, the rewards for culinary perfection are great, and only the very best will secure their spot on the Michelin Guide’s exclusive list.

Bristol-based restaurant Wilsons will feature in the UK episodes of the series. Led by partners Jan Ostle and Mary Wilson, the restaurant is almost entirely self-sufficient, embodying a pioneering approach to the farm-to-table movement while maintaining its roots as a beloved neighbourhood destination. While Jan oversees the kitchen, Mary tends to Wilsons two-acre Market Garden, which serves as the restaurant’s main supplier of vegetables, fruits and herbs. The harvest is prized, not only used within the weekly changing menu, but preserved, pickled and dried for use during the ‘hungry gap’ - the period from March through to May when produce is at its scarcest - while surplus is sold at the restaurant’s neighbouring bakery, The Bread Shop.

Knife Edge: Chasing Michelin Stars will premiere exclusively on Apple TV+ on Friday 10th October 2025, with new episodes released weekly.
