This March, Bristol hospitality group Season + Taste launches their highly anticipated new restaurant, Condesa, on Whiteladies Road.

Founded by Kieran & Imogen Waite, Season + Taste run three successful restaurants in Bristol; serving delicious Spanish tapas at Bravas & Gambas, and flavourful Mexican at Cargo Cantina. Their new opening, Condesa, brings the flavour and energy of Mexico City to the UK, and is now open for bookings at https://condesabristol.co.uk/.

Head Chef Sean Martin, moving from Cargo Cantina, has developed a delicious menu of “food that gives you dopamine." Paying homage to classic dishes whilst also being inspired by modern Mexican cooking, the menu is filled with must-try dishes, such as the Queso Fresco- a home-made cheese served with hot agave & preserved lime. Sean says “Condesa has been a long-term passion project, and the menu is designed to work for both a quick bar snack, and a special celebration. We’re all very excited to have a custom grill from Tom at Firemade, with fire & smoke being a focus of the cooking.”

Kieran and Imogen, who have been sharing the restaurant’s build & development on Instagram @condesabristol, are focussed on producing their unique intimate restaurant atmosphere, with candlelit booths and an open kitchen. Imogen Waite says “We wanted to create a space that felt really comfortable, both for our team and our guests. We chose materials that would age well, improving with use and creating a timeless institution.”

Mezcal & Tequila are a major part of the offering, of course, with a hidden Mezcal Den containing a range of artisan mezcals to share. Kieran says, “In Oaxaca we all fell in love with Mezcal, and the Mezcal Den is a fun little detail to showcase that."

19 - 23 March; Soft Week One; dinner service only.
25 – 30 March; Soft Week Two; all day service, inside only.
From 1 April; restaurant & terrace open all day, taking walk ins.
