From 17 May, LEON customers can enjoy Arancini inspired by Sicilian street food, a Caribbean curry without the long haul flight and fresh summer salads perfect for picnics in the park.

The new Spring-Summer menu still puts plants into the spotlight, remaining at the centre of LEON’s plates. Championing plant variety and creating a rainbow effect, the new menu dishes will leave customers' microbiomes in full bloom, ready to spring into summer.

For lighter lunches and a burst of fresh flavour, LEON has introduced a new salad collection. Each salad has a fibre-packed Greens and Grains base of leafy greens, lentils and grains. Topping the Greens and Grains in LEON's first salad is the classic Aioli Chicken (£6.99), including a chargrilled chicken thigh, in-house Aioli, a sprinkling of sumac, fresh pomegranate and a lemon wedge for squeezing. Customers wanting to feel the heat can add a pot of LEON Chilli sauce for a spicy kick at £0.30 extra. 

The Sunshine Squash Salad (£5.99) has 20 different varieties of plants. The squash is roasted in cumin and rapeseed oil and tops the Greens and Grains base. Finished with vibrant gut-loving pink kraut, a sprinkling of sumac, fresh mint and parsley, go ahead and squeeze on that lemon wedge and tuck into this fresh summer salad.

LEON also brings back the best of Caribbean flavours with its Caribbean Chicken Curry (£7.49). Tender chicken thigh is mixed with sweet potato & kale that has been slowly simmered in a fragrant and creamy coconut sauce. With an added zinging kick of lime and habanero chilli, this curry is sunshine in a box on a cloudy day.

At the core of LEON’s menu is the Mediterranean diet and all its inspiring flavours. Say Buongiorno to the Sicilian-influenced Truffle and Mushroom Arancini (£3.99). Mozzarella and truffle, with chestnut and porcini mushrooms in a crisp gluten-free crumb, served with LEON’s famous tomato sauce for dipping. At £3.99, it’s the perfect summer side to transport customers to the sunny streets of Sicily.
